Well, I think I understand most of your post. If you continue to give the parents a well rounded, healthy diet, they should feed the chicks as long as needed.

DO NOT try to force weaning! Make sure that the chicks are eating on their own before selling them or giving them away.

You can start handling the chicks and playing with them to make them tame without having to pull them to hand feed. I have done this and had a better chick than one that is just handled to handfeed.
