Egg binding is usually a situation caused by a lack of calcium or poor nutrition. This is not to say that it couldn't be a genetic predisposition, but chances are it isn't.
Since this pair is bonded and wanting to breed, not to mention the "time off" they've had, I would see no reason why you couldn't allow them to breed again.
What you want to do is to make sure that they are receiving a quality diet which would include a good calcium source (s). Dark leafy greens such as kale, collards, mustards and broccoli help to provide a natural source of calcium. You could also encourage breeding mode as well as contribute to the diet, by including hard-cooked eggs which have been chopped with the shells included.
If you are so inclined, a liquid calcium source could be added to the drinking water.
Remember that calcium is what muscles require to help expel the egg from the hen as well as to ensure properly formed eggs.
